Coconut Pineapple Bites: A Tropical Treat in Every Bite
Ingredients You’ll Need
- 1 cup dried pineapple (chopped into small pieces)
- 1 cup unsweetened shredded coconut (plus extra for rolling)
- ½ cup almond flour (or any nut flour of your choice)
- 2 tablespoons coconut oil, melted
- 2 tablespoons honey (or maple syrup for a vegan option)
- 1 teaspoon vanilla extract
- Pinch of sea salt
How to Make Coconut Pineapple Bites
Step 1: Prepare the Mixture
- Process the Ingredients: In a food processor, combine the chopped dried pineapple, shredded coconut, almond flour, melted coconut oil, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Pulse the mixture until it becomes a sticky, dough-like consistency. The mixture should be moist enough to hold together when pressed.
- Adjust as Needed: If the mixture is too dry, add a little more coconut oil. If it's too wet, sprinkle in a bit more almond flour or coconut.
Step 2: Shape the Bites
- Form the Bites: Using your hands, roll the mixture into small, bite-sized balls (about 1 inch in diameter).
- Roll in Coconut: Roll each ball in additional shredded coconut to give them a beautiful, snowball-like finish and extra coconut flavor.
Step 3: Chill & Serve
- Chill: Place the Coconut Pineapple Bites in the refrigerator for at least 20-30 minutes to firm up.
- Serve & Enjoy: Once chilled, these bites are ready to serve! Store any leftovers in an airtight container in the fridge for up to one week.
