Crispy, savory, and packed with flavor, these Mediterranean Spinach and Feta Crisps are the perfect bite-sized appetizer or snack. With a blend of fresh spinach, tangy feta, and a touch of Mediterranean herbs, these crisps are light, healthy, and totally satisfying!

Ingredients

1 cup fresh spinach, chopped

1/2 cup crumbled feta cheese

1/4 cup grated Parmesan cheese

1/4 cup almond flour (or all-purpose flour)

1 large egg

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Step 1: Preheat the Oven

      • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Step 2: Prepare the Crisp Mixture

      • In a large bowl, combine the chopped spinach, feta cheese, Parmesan cheese, almond flour, egg, olive oil, dried oregano, garlic powder, salt, and pepper.
      • Mix until everything is well combined and holds together.

    Step 3: Form the Crisps

    • Take small spoonfuls of the mixture and form them into round balls or small patties. Place them on the prepared baking sheet, spaced about 2 inches apart.

    Step 4: Bake the Crisps

    • Bake for 12–15 minutes, or until the crisps are golden brown and crispy on the edges. You can flip them halfway through the baking time to ensure even crispiness.

    Step 5: Serve

    • Once baked, remove from the oven and let them cool for a few minutes. Garnish with fresh parsley (optional) and serve.

Notes

For a gluten-free version, use almond flour or coconut flour instead of regular flour.

You can add extra Mediterranean flavors, such as olives or sun-dried tomatoes, to the mixture for variety.

If you prefer a stronger feta flavor, feel free to increase the amount of feta.
