Crock Pot Pepper Steak: A Hearty, Flavorful Dinner
Ingredients You’ll Need
For the Pepper Steak:
- 1.5 pounds flank steak or sirloin, sliced into thin strips
- 2 bell peppers, sliced (any combination of red, green, or yellow)
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1/4 cup soy sauce
- 1/4 cup oyster sauce (optional)
- 2 tablespoons cornstarch
- 1 tablespoon Worcestershire sauce
- 1 teaspoon ground ginger
- Salt and pepper, to taste
For Serving:
- Cooked rice or noodles
- Chopped green onions (for garnish)
- Sesame seeds (optional)
Step-by-Step Instructions
Step 1: Prepare the Ingredients
Slice the flank steak against the grain into thin strips. Also, slice the bell peppers and onion, and mince the garlic.
Step 2: Combine in the Crock Pot
Place the sliced beef, bell peppers, onion, and minced garlic in your crock pot.
Step 3: Mix the Sauce
In a separate bowl, whisk together the beef broth, soy sauce, oyster sauce (if using), Worcestershire sauce, ground ginger, cornstarch, salt, and pepper.
Step 4: Pour the Sauce
Pour the sauce mixture over the beef and vegetables in the crock pot. Stir gently to combine, ensuring everything is coated evenly.
Step 5: Cook
Cover the crock pot and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender and the flavors meld together.
Step 6: Thicken the Sauce (Optional)
If you like a thicker sauce, mix an additional tablespoon of cornstarch with cold water to create a slurry. Stir this into the crock pot about 30 minutes before serving and cook uncovered to thicken.
Step 7: Serve
Once cooked, serve the pepper steak over rice or noodles. Garnish with chopped green onions and sesame seeds for a burst of flavor.
