- For the Cheesecake:
- 500g (about 1 lb) farmer's cheese or ricotta cheese
- 3 large eggs
- 150g (¾ cup) granulated sugar
- 100ml (about ⅓ cup + 1 tablespoon) sour cream
- 1 teaspoon vanilla extract
- 1 tablespoon all-purpose flour (optional, for thickening)
- 1 teaspoon baking powder
- A pinch of salt
- Zest of 1 lemon (optional)
- For Serving:
- Fresh fruit (like berries or sliced fruit)
- Powdered sugar for dusting
- Sour cream or yogurt (optional)
Instructions
- Preheat the Oven:
- Preheat your oven to 180°C (350°F).
- Prepare the Cheese Mixture:
- In a large mixing bowl, combine the farmer's cheese (or ricotta), sugar, sour cream, and vanilla extract. Use a fork or a hand mixer to blend until smooth.
- Add the eggs one at a time, mixing well after each addition. If you prefer a denser texture, add the flour and baking powder, mixing until well combined.
- Add Flavorings:
- Stir in the salt and lemon zest (if using) until evenly distributed.
- Prepare the Baking Dish:
- Grease a baking dish (approximately 8-inch round or square) with butter or line it with parchment paper.
- Bake:
- Pour the cheese mixture into the prepared baking dish, smoothing the top with a spatula.
- Bake in the preheated oven for 40-50 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean.
- Cool and Serve:
- Allow the zapekanka to cool in the pan for about 10 minutes, then carefully remove it and transfer to a wire rack to cool completely.
- Serve warm or chilled, dusted with powdered sugar and topped with fresh fruit or a dollop of sour cream if desired.
