Hoisin Chicken Udon Noodles Recipe

Ingredients:

  • 8 oz udon noodles (fresh or frozen)
  • 2 tablespoons vegetable oil (or sesame oil)
  • 2 chicken breasts, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated (optional)
  • 1 cup broccoli florets (or any vegetables of your choice)
  • 1/2 cup bell peppers, sliced
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar (optional)
  • 1 teaspoon sesame oil (optional)
  • 1 tablespoon honey (optional for added sweetness)
  • Sliced green onions, for garnish
  • Sesame seeds, for garnish

Instructions:

  1. Cook the Udon Noodles:
    • If using fresh udon noodles, simply set them aside. If using frozen, cook according to package instructions (usually about 3-4 minutes), then drain and set aside.
  2. Cook the Chicken:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken and season with a little salt and pepper. Stir-fry the chicken for about 5-6 minutes until fully cooked and browned. Remove the chicken from the skillet and set aside.
  3. Sauté the Vegetables:
    • In the same skillet, add another tablespoon of oil if needed. Add the minced garlic and grated ginger (if using) and sauté for about 30 seconds until fragrant. Add the broccoli and bell peppers, and stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
  4. Make the Sauce:
    • In a small bowl, mix together the hoisin sauce, soy sauce, rice vinegar, sesame oil, and honey (if using). Whisk until well combined.
  5. Combine Everything:
    • Add the cooked udon noodles and chicken back into the skillet with the vegetables. Pour the hoisin sauce mixture over everything and toss gently to coat the noodles, chicken, and vegetables evenly. Cook for another 2-3 minutes until everything is heated through and well coated in the sauce.
  6. Serve:
