How to Make Snickerdoodle Cheesecake
Step 1: Prepare the Crust
- Preheat the Oven: Begin by preheating your oven to 325°F (160°C).
- Mix the Crust Ingredients: In a mixing bowl, combine the graham cracker crumbs, melted butter, and ¼ cup granulated sugar. Mix until the crumbs are evenly coated.
- Press the Mixture: Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let it cool.
Step 2: Make the Cheesecake Filling
- Beat the Cream Cheese: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Add Sugar and Vanilla: Gradually add in the 1 cup of granulated sugar and vanilla extract, mixing until combined.
- Incorporate Eggs: Add the eggs one at a time, mixing on low speed until just combined after each addition. Be careful not to overmix.
- Mix in Cinnamon and Sour Cream: Finally, fold in the ground cinnamon and sour cream until smooth and well combined.
Step 3: Assemble and Bake
- Pour the Filling: Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.
- Bake: Bake in the preheated oven for 55-65 minutes, or until the center is set but still slightly jiggly. The edges should be slightly puffed and the center will firm up as it cools.
- Cool: Once done, turn off the oven and crack the oven door open, allowing the cheesecake to cool slowly for about an hour. Then, refrigerate for at least 4 hours, preferably overnight.
Step 4: Add the Topping
- Prepare the Cinnamon Sugar: In a small bowl, mix together the 2 tablespoons of granulated sugar and 1 teaspoon of ground cinnamon.
- Serve: Before serving, sprinkle the cinnamon sugar topping over the chilled cheesecake. Slice and enjoy!
