Lasagna Soup Recipe
Ingredients:
- 1 lb ground beef (or Italian sausage)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or beef broth
- 2 cups water
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 8 oz lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and black pepper, to taste
- Fresh basil or parsley, for garnish (optional)
Instructions:
- Cook the Meat:
- In a large pot, heat a little oil over medium heat. Add the ground beef (or Italian sausage) and cook until browned, breaking it up with a spoon as it cooks. Drain excess fat if necessary.
- Add Aromatics:
- Add the diced onion and garlic to the pot and cook for about 2-3 minutes until softened and fragrant.
- Make the Soup Base:
- Stir in the crushed tomatoes, tomato paste, broth, water, oregano, basil, and red pepper flakes. Bring the mixture to a simmer and cook for 10 minutes to let the flavors combine.
- Cook the Noodles:
- Add the broken lasagna noodles to the soup and continue to simmer for another 10-12 minutes, or until the noodles are tender. Stir occasionally to prevent the noodles from sticking.
- Make the Cheese Mixture:
- While the noodles cook, combine the ricotta, mozzarella, and Parmesan cheeses in a small bowl. Set aside for serving.
- Season the Soup:
- Once the noodles are cooked, season the soup with salt and pepper to taste.
- Serve:
- Ladle the soup into bowls and top each with a generous spoonful of the cheese mixture. Garnish with fresh basil or parsley if desired.
