How to Make Refreshing No-Bake Pineapple Coconut Bars
Step 1: Prepare the Crust
- Mix the Crust Ingredients: In a medium bowl, combine the graham cracker crumbs, shredded coconut, granulated sugar, and melted butter. Mix until well combined and crumbly.
- Press into Pan: Press the mixture firmly into the bottom of an 8x8-inch baking dish to form an even layer. Use the back of a measuring cup or your hands to pack it down tightly.
Step 2: Make the Filling
- Beat Cream Cheese: In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add Sugar and Vanilla: Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated.
- Fold in Pineapple and Coconut: Gently fold in the crushed pineapple (making sure it’s well-drained) and shredded coconut until combined.
Step 3: Assemble the Bars
- Spread the Filling: Pour the filling over the prepared crust, spreading it evenly with a spatula.
- Chill: Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or until the filling is set.
Step 4: Serve
- Cut into Bars: Once set, remove the bars from the refrigerator and lift them out of the dish using the edges of the parchment paper.
- Slice and Garnish: Cut into squares and top with whipped cream and extra shredded coconut, if desired.
