Strawberry French Toast Roll-Ups Recipe
Ingredients:
For the Roll-Ups:
- 8 slices of white or whole wheat bread
- 4 oz cream cheese, softened
- 1 cup fresh strawberries, hulled and sliced
- 2 tablespoons granulated sugar (for the strawberries)
- 2 eggs
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 2 tablespoons butter (for frying)
For the Cinnamon Sugar Coating:
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions:
- Prepare the Strawberries:
- In a medium bowl, mix the sliced strawberries with 2 tablespoons of sugar. Set aside for about 10-15 minutes to allow the strawberries to release their juices.
- Flatten the Bread:
- Using a rolling pin, flatten each slice of bread to about 1/4 inch thickness.
- Fill the Roll-Ups:
- Spread a thin layer of cream cheese over each slice of flattened bread. Place a few slices of the sweetened strawberries on one edge of the bread and roll it up tightly, starting from the edge with the filling. Repeat with the remaining slices of bread.
- Prepare the Egg Mixture:
- In a shallow bowl, whisk together the eggs, milk, and vanilla extract until well combined.
- Cinnamon Sugar Coating:
- In another shallow bowl, mix together the granulated sugar and cinnamon for the coating. Set aside.
- Cook the Roll-Ups:
- In a large skillet, melt butter over medium heat. Dip each roll-up into the egg mixture, ensuring they are well-coated, then place them seam-side down in the skillet. Cook for about 2-3 minutes on each side or until golden brown and crispy.
- Coat with Cinnamon Sugar:
- Once cooked, remove the roll-ups from the skillet and immediately roll them in the cinnamon sugar mixture until fully coated.
- Serve:
