Ingredients
  

Beef & Seasoning

  • 1 tbsp olive oil sub avocado oil
  • 1 1/4 lb sirloin steak, cut into 1-inch pieces sub stew meat or ribeye
  • salt & pepper to taste

Vegetables & Aromatics

  • 3 tbsp butter sub ghee for nutty flavor
  • 8 oz cremini mushrooms, sliced sub white mushrooms or portobello
  • 1/2 cup onion, chopped sub shallots
  • 1 tsp garlic, minced fresh recommended

Gravy Base

  • 3 tbsp all-purpose flour sub gluten-free flour
  • 1 1/2 cups beef broth use low-sodium
  • 1 tbsp Worcestershire sauce sub coconut aminos
  • 2 tsp low-sodium soy sauce sub tamari
  • 1 tbsp fresh parsley, chopped optional but recommended

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat. Add the sirloin pieces, season with salt and pepper, and brown on all sides.
  • Transfer the browned beef tips to a plate to rest and remain juicy.
  • Add butter to the same skillet. Once melted, add the mushrooms and onions. Sauté for 5–6 minutes until caramelized and fragrant.
  • Stir in the minced garlic and cook for 30 seconds until aromatic.
  • Sprinkle flour over the vegetables and stir well to form a roux. Cook for 1 minute to remove raw flour taste.
  • Slowly pour in the beef broth while whisking to avoid lumps. Add Worcestershire and soy sauce. Allow the mixture to thicken into a rich gravy.
  • Return the beef tips to the skillet and simmer for 5–7 minutes until tender and coated in gravy. Simmer longer for a deeper, richer flavor.
  • Finish with fresh parsley and serve immediately.

Notes

Serve over mashed potatoes, rice, egg noodles, or cauliflower mash for a hearty and satisfying meal.
