Ingredients
  

Tart Components

  • 2 sweet onions thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 pinch kosher salt
  • 1 sheet puff pastry thawed if frozen
  • 2 apples thinly sliced
  • 8 oz brie cheese thinly sliced
  • 1 egg beaten with 1 tbsp water for egg wash
  • 0.33 cup pomegranate arils
  • 1 drizzle pomegranate molasses for serving

Instructions
 

  • Caramelize the Onions: Heat olive oil and butter in a skillet over medium heat. Add onions and salt. Cook, stirring occasionally, for 20-25 minutes until golden brown and jammy.
  • Prep the Pastry: Preheat oven to 400°F (200°C). Place puff pastry on a parchment-lined baking sheet. Score a 1-inch border around the edge and prick the center with a fork.
  • Assemble: Spread caramelized onions inside the border. Layer sliced apples and brie cheese alternately on top of the onions.
  • Bake: Brush the pastry border with the egg wash. Bake for 20-25 minutes until the pastry is puffed and golden brown.
  • Garnish: Sprinkle with pomegranate arils and drizzle with pomegranate molasses. Slice and serve warm.

Notes

For extra crunch, add chopped toasted walnuts before serving.
