Ingredients
  

Onion Base

  • 4 onions, sliced
  • 4 Tbsp unsalted butter
  • 4 cloves garlic, finely chopped
  • 1 tsp fresh thyme leaves

Sauce

  • 2/3 cup low-sodium beef broth
  • 2 Tbsp aged balsamic vinegar
  • 1/2 tsp sea salt
  • 1/2 tsp freshly ground black pepper

Chicken & Cheese

  • 4 boneless skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions
 

  • Melt the butter in a large skillet over medium heat. Add sliced onions and cook for 12–15 minutes until golden and caramelized. Add garlic and thyme in the last 1–2 minutes.
  • Pour in the beef broth and balsamic vinegar. Stir and scrape up any browned bits. Let simmer for 2 minutes. Season with salt and pepper.
  • Preheat oven to 375°F (190°C). Grease a baking dish and place the chicken breasts inside. Pour the onion mixture over the chicken.
  • Sprinkle mozzarella evenly over the chicken, followed by Parmesan for a golden crust.
  • Bake for 20–25 minutes, or until chicken reaches 165°F (74°C) and cheese is bubbly. Broil for 2 minutes if desired for extra browning.
  • Let rest for 5 minutes before serving. Garnish with fresh thyme or parsley.

Notes

For a lighter version, substitute olive oil for part of the butter or reduce the cheese. Serve with mashed potatoes, rice, or roasted vegetables.
