Steak Bites

  • 1 tbsp olive oil Avocado oil works great for higher heat.
  • 1.5 lb sirloin steak, cut into bite-sized pieces Sub with ribeye, NY strip, or tenderloin.
  • 1/2 tsp salt Use sea salt or kosher salt.
  • 1/2 tsp black pepper Freshly cracked for best aroma.

Garlic Butter

  • 2 tbsp unsalted butter Use salted butter and reduce salt if preferred.
  • 4 cloves garlic, minced Fresh garlic recommended.
  • 1/4 tsp red pepper flakes (optional) Use paprika for no-heat flavor.
  • 1 tbsp fresh parsley, chopped (optional) Swap with chives or thyme.

Instructions
 

  • Pat the steak cubes dry with paper towels to ensure proper browning. Season generously with salt and black pepper.
  • Heat a cast-iron or stainless-steel skillet over medium-high heat. Add olive oil and allow it to shimmer.
  • Add the steak bites in a single layer. Sear for 2–3 minutes per side, turning only once the underside is deeply browned. Work in batches if needed.
  • Reduce heat to medium. Add butter, minced garlic, and red pepper flakes. Stir gently as the butter melts and flavors the steak. Cook 1–2 minutes, avoiding burning the garlic.
  • Remove from heat and garnish with chopped parsley or preferred herbs. Serve immediately.

Notes

For extra depth of flavor, add a splash of Worcestershire sauce or lemon juice. Serve with potatoes, rice, or roasted vegetables.
