  • 1 cup All-purpose flour
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 large Eggs Beaten
  • 1 cup Panko breadcrumbs
  • 1 cup Vegetable oil As needed for frying

Creamy Lemon Herb Dip

  • 0.5 cup Mayonnaise
  • 0.25 cup Greek yogurt
  • 2 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 1 tablespoon Fresh dill Chopped
  • 1 tablespoon Fresh parsley Chopped
  • 1 clove Garlic Minced

Instructions
 

  • Prep the Dredging Stations: In one bowl, mix flour, garlic powder, paprika, salt, and pepper. In a second bowl, beat the eggs. In a third, place Panko breadcrumbs.
  • Coat the Cod: Dredge cod pieces in flour, dip in egg, then press firmly into Panko breadcrumbs to coat.
  • Fry to Golden Perfection: Heat vegetable oil in a skillet to medium-high. Fry bites for 2-3 minutes per side until golden brown.
  • Drain and Rest: Remove bites and drain on a wire rack or paper towels to remove excess oil.
  • Mix the Dip: Whisk together mayonnaise, yogurt, lemon juice, zest, herbs, and garlic. Season with salt/pepper. Serve with warm fish.

Do not crowd the pan when frying; cook in batches to maintain oil temperature and ensure crispiness.
