  • 4 boneless skinless chicken breasts slice in half lengthwise for quicker cooking
  • 1/2 cup grated Parmesan cheese freshly grated preferred
  • 1/2 tsp black pepper
  • 1 tsp seasoning salt
  • 1 tsp garlic powder or substitute 2 minced garlic cloves
  • 1 cup mayonnaise or Greek yogurt for lighter version

Instructions
 

  • Preheat oven to 400°F (205°C). Line a baking sheet with parchment or lightly grease a casserole dish.
  • In a bowl, combine mayonnaise, Parmesan cheese, garlic powder, seasoning salt, and black pepper. Stir until smooth.
  • Place chicken breasts on the prepared pan. Spread the mixture evenly over each piece, keeping the coating slightly thicker in the center.
  • Bake for 20 minutes or until golden brown and the chicken reaches 165°F (74°C). Broil the last 2 minutes for a crispier top if desired.
  • Remove from the oven and let rest for 3–5 minutes before serving.

Notes

Using Greek yogurt instead of mayo reduces fat by about 35%. Freshly grated Parmesan melts better and improves browning.
