  • 1 pound ground sausage turkey or spicy sausage optional
  • 1 cup diced red pepper or green/yellow bell pepper
  • 1 sweet onion, diced Walla Walla or Vidalia
  • 1/2 cup diced mushrooms brown or white
  • 3 tsp fresh minced garlic
  • 1 1/3 cups milk plant milk optional
  • 3 eggs
  • 3/4 cup Bisquick or similar baking mix
  • 3/4 tsp sage
  • 1/4 tsp black pepper
  • 2 1/2 cups Monterey Jack cheese, grated

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9-inch pie dish or casserole pan.
  • In a large skillet over medium heat, brown the ground sausage for 5–7 minutes. Drain excess fat if desired.
  • Add diced red pepper, onion, mushrooms, and garlic. Sauté until tender, about 4–5 minutes.
  • In a mixing bowl, whisk together the milk, eggs, Bisquick, sage, and black pepper until smooth.
  • Spread the sausage-vegetable mixture evenly into the prepared dish. Sprinkle with 2 cups of Monterey Jack cheese. Pour the egg mixture over top, then add the remaining 1/2 cup cheese.
  • Bake for 35–40 minutes, or until puffed, golden, and set. Rest for 5 minutes before slicing.
