  • 5 boneless, skinless chicken breasts
  • 6 tbsp unsalted butter, divided
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 lemons, juiced and zested
  • 2 garlic cloves, minced

Creamy Sauce

  • 1 cup half and half
  • 1 tbsp cornstarch
  • 1 tbsp chicken base (optional)

Instructions
 

  • Pat the chicken breasts dry. Season with salt, pepper, and Italian seasoning. In a skillet, melt 1–2 tablespoons of butter and sear chicken 3–4 minutes per side until lightly golden.
  • Transfer chicken to the slow cooker. Add lemon juice, lemon zest, minced garlic, and the remaining butter.
  • Cover and cook on low for 4–5 hours or high for 2–3 hours, until chicken is tender and cooked through.
  • Mix half and half with cornstarch and optional chicken base. Pour into the slow cooker and stir gently. Continue cooking on high for 30–45 minutes until sauce thickens.
  • Taste and adjust seasoning. Serve chicken topped with generous spoonfuls of the creamy lemon sauce.

Notes

For a richer flavor, use chicken thighs. If sauce is too thick, add a splash of broth. If it's too thin, cook uncovered for the final 10 minutes.
