Instructions
 

  • Combine the Meat Mixture: In a large mixing bowl, gently combine the ground beef, egg, crushed crackers, Italian seasoning, salt, pepper, garlic, jalapeño, and shredded cheese. Do not overmix to avoid a tough meatloaf.
  • Shape the Loaf: Form the mixture into a firm, even loaf shape. For easier cleanup and removal, line your crock pot with parchment paper or aluminum foil.
  • Place into the Crock Pot: Set the loaf in the slow cooker, centered for even cooking. Optional: elevate the loaf on a rack or foil balls to reduce moisture absorption.
  • Prepare the Glaze: Whisk together ketchup, brown sugar, and honey until smooth. Spread half the glaze over the top of the loaf.
  • Cook Low and Slow: Cover and cook on LOW for 3.5–4 hours, until internal temperature reaches 160°F.
  • Add the Final Glaze: Spread the remaining glaze over the meatloaf during the final 30 minutes of cooking.
  • Rest, Slice & Serve: Let the meatloaf rest for 10 minutes before slicing to help retain juices.
