Wholesome Cabbage Soup: A Healthy and Delicious Recipe

Ingredients You’ll Need

  • 1 medium head of green cabbage, chopped
  • 2 large carrots, diced
  • 1 large onion, chopped
  • 2 stalks of celery, diced
  • 4 cloves of garlic, minced
  • 6 cups vegetable or chicken broth
  • 1 can (14.5 ounces) diced tomatoes (with juices)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional: 1 bell pepper, diced, and a pinch of red pepper flakes for a spicy kick!

How to Make Cabbage Soup

Step 1: Sauté the Vegetables

  1. Heat a Large Pot: Begin by heating a large pot over medium heat and adding a splash of olive oil.
  2. Cook the Aromatics: Add the chopped onions, celery, and carrots to the pot. Sauté for about 5-7 minutes, or until the vegetables are softened. Stir in the minced garlic and cook for an additional minute until fragrant.

Step 2: Add Cabbage and Broth

  1. Add the Cabbage: Stir in the chopped cabbage, mixing well with the sautéed vegetables.
  2. Pour in the Broth: Add the vegetable or chicken broth and the can of diced tomatoes (including the juices). Stir to combine.

Step 3: Season and Simmer

  1. Season the Soup: Add the dried thyme, oregano, salt, and pepper (and red pepper flakes if using) to the pot. Bring the soup to a boil.
  2. Simmer: Once boiling, reduce the heat to low and let the soup simmer for about 30-40 minutes, or until the cabbage is tender.

Step 4: Serve and Enjoy

  1. Taste and Adjust: Before serving, taste the soup and adjust the seasoning if needed.
  2. Serve Hot: Ladle the soup into bowls and enjoy! You can also top it with fresh herbs or a sprinkle of cheese for added flavor.
