Ingredients You’ll Need
- 1 medium head of green cabbage, chopped
- 2 large carrots, diced
- 1 large onion, chopped
- 2 stalks of celery, diced
- 4 cloves of garlic, minced
- 6 cups vegetable or chicken broth
- 1 can (14.5 ounces) diced tomatoes (with juices)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Optional: 1 bell pepper, diced, and a pinch of red pepper flakes for a spicy kick!
How to Make Cabbage Soup
Step 1: Sauté the Vegetables
- Heat a Large Pot: Begin by heating a large pot over medium heat and adding a splash of olive oil.
- Cook the Aromatics: Add the chopped onions, celery, and carrots to the pot. Sauté for about 5-7 minutes, or until the vegetables are softened. Stir in the minced garlic and cook for an additional minute until fragrant.
Step 2: Add Cabbage and Broth
- Add the Cabbage: Stir in the chopped cabbage, mixing well with the sautéed vegetables.
- Pour in the Broth: Add the vegetable or chicken broth and the can of diced tomatoes (including the juices). Stir to combine.
Step 3: Season and Simmer
- Season the Soup: Add the dried thyme, oregano, salt, and pepper (and red pepper flakes if using) to the pot. Bring the soup to a boil.
- Simmer: Once boiling, reduce the heat to low and let the soup simmer for about 30-40 minutes, or until the cabbage is tender.
Step 4: Serve and Enjoy
- Taste and Adjust: Before serving, taste the soup and adjust the seasoning if needed.
- Serve Hot: Ladle the soup into bowls and enjoy! You can also top it with fresh herbs or a sprinkle of cheese for added flavor.
